Carne Asada Burrito w/ Duck Fat Tortilla

A burrito so stuffed it can't close

Duck Fat Tortillas

Makes 4 large tortillas

Ingredient Amount
Flour 1.5 cups
Water 1/2 cup + more depending on conditions
Duck Fat 2 tablespoons
Salt 1/2 - 1 tsp of salt

Carne Asada

Ingredient Amount
Hanger Steak 1.5 lbs
Garlic (fresh) 3-4 large cloves
Cumin 1 tsp
Mexican Oregano 2 tsp
Kosher Salt 1 tbsp
Black Pepper 1 tsp
Cayenne Pepper 1/2 tsp
Cinnamon 1/2 tsp
Cilantro (fresh) 3 tbsp
(Optional) Worchestershire Sauce 1/4 tsp

Butterfly the steaks into thin 1/2" - 3/4" thick steaks so there's more surface area for charring and faster cook times. Marinate for 2-4 hours or overnight if possible.

Heat a cast iron and sear to desired done-ness. Let rest and cut into 1/2" cubes.

Cilantro Lime Rice

  • 2 cups Jasmine Rice
  • 3 cups Water
  • 2 tbsp lime (introduced once cooked)
  • 3-4 tbsp Cilantro (introduced once cooked)
  • Salt to taste
