Smokafried Wings

-- Note – Recommended to do this with chicken not duck wings. Duck wings were too tough – preferred to braise them.

Method

  • Season Wings (I chose Old bay Seasoning)
  • Smoke wings until fully cooked (30m to an hour @ 275)
  • Coat wings in batter and fry
  • Toss in Sauce (Ketchup, Pepper, Old Bay, Honey, simmered on low)
